To two-hand in Elden Ring Nightreign, you'll need to ensure that your character has a handheld weapon equipped in each hand, then press the examine command and light attack button at the same time to switch between them—on PlayStation, this would be Triangle and R1.
You can confirm that you've equipped the correct weapon types by entering the equipment menu and checking that two handheld weapons are selected:
