Stack
If you have never touched these settings, "Stack" seems to be the default setting, it just stacks all notifications at the bottom of the screen. They don't shrink into a line of text, but they're arranged tightly, and you can click on them or swipe up to see more details.
List
No doubt this is the most confusing choice, the "list" display will show your notifications as a separate reminder bubble, with the latest reminder located at the top. If there are too many notifications, they will start to overlap slightly, but this option will take up the maximum space on the screen.
Other notes about iPhone lock screen notification options
No matter which option you choose, your notification will always be displayed first in the form of a bubble at the bottom of the screen. Each bubble will contain the name of the app that reminds you, and if you allow iOS to give you a preview, a preview of the content in that notification. If you have turned off the preview (click Show Preview and then click Never or Unlock), you will see some common information, such as "51 SMS" or "Notification".
Your reminder will be in the format you requested after one or two minutes of no touch.
